There is nothing like a cold IBC root beer right out of a bottle. At least that was the case when I was a teenager and felt like I was beyond cool drinking out of a bottle, leaning up against the wall looking cool with my jeans folded and rolled up at the bottom and my obnoxious perm. Life was so good.
Now my kids love the root beer. We rarely have soda in our house, but if we do it’s root beer for a sleepover, birthday party, etc.
So when I came across this recipe for root beer cupcakes, it was a no brainer that this would be included in my 52 cupcake series. Most root beer cupcakes have a vanilla buttercream frosting but not this one. This is 100% root beer from top to bottom. It has root beer concentrate in the frosting (I found mine at Walmart).
This was an extremely easy recipe to follow. I did double the recipe to make 2 dozen cupcakes.
I make cupcakes every Tuesday morning so the kids get to taste test every Tuesday when they come home from school. And today, what would go best with a root beer cupcake? Why root beer floats with crazy straws of course! I got 4 enthusiastic thumbs up.
This recipe came from Nourhan, from Miss Anthropist’s Kitchen. Nourhan is a 19 year old pharmacy student whose passion is baking. And if her other recipes are half as good as this cupcake recipe, she has an amazing future ahead of her!
So don’t hesitate. Head on over to Miss Anthropist’s Kitchen and tell Nourhan I sent you. You can find the recipe here.

Story of the 52 cupcakes:
I am making 52 cupcakes this year in honor of my chemotherapy buddy. When we were undergoing chemotherapy, people would bring cupcakes and other treats to the chemotherapy “lounge”. We would smile, laugh, and talk about how we were so nauseous and that all we could eat was saltine crackers and Sprite. We were glad that our family and friends were comforted by them though.
My friend said, “If we survive this disease, we should eat a different cupcake every week for the rest of our lives.” My friend did not survive. So in honor of him, I am making a different cupcake every week for a year. Every time I make a new cupcake and lick my fingers, I think of him and his zest for life. So in honor of my friend and all cancer patients, I challenge you to eat a cupcake today and remember to always lick your fingers.

Looks good! I like to think that you iced them w/that tip b/c I told you it was my favorite. I’ll keep telling myself that!
Jenny
Yes I did. But ironically after I frosted them, I thought…”I should have used the other tip but you listened to your sister!”

I took these and hollowed out a core in the middle, filled it with vanilla ice cream, but the lip back on and then frosted them, called them Root Beer Float cupcakes! Just make sure to keep them frozen until you are ready to serve:) My husband (doesn’t like cupcakes) said they were awesome!!

My son gets a root beer float every time we go to Dairy Queen. I’m so going to take your idea and surprise Ben with these. So glad your husband loved them. Thanks for letting me (us) know!
