Hi friends! I’m back and I am here to introduce you to another fabulous internet gem. I now have a love affair with all things cupcakes. Once again, through Bridget at Bake at 350, I have discovered another fabulous food blogger, Josie at Daydreamer Desserts. What a fabulous site. I am excited to get back from my travels this weekend and try out many of her recipes.
This week I thought I would find a cupcake in honor of breast cancer awareness month. Unless you live under a rock, you probably know that October means pink, pink ribbons, pink water bottles, etc. Often several stores look like the Steel Magnolia’s wedding. Does anyone remember that movie? Julia Robert’s character gets married and it looks so pink, like someone threw up Pepto Bismo all over the backdrop of the church. I love that movie.
I have a confession. I HATE pink. I really hate pink. I found out I had breast cancer in October and was surrounded by pink things. Honestly, I think I was just overloaded with pink.
But oh my friends, I love red. Like love affair with all things red friends. I also love strawberries. So in honor of my boobs that are sitting in some laboratory jar somewhere… I present this awesome cupcake. Strawberry and a taste of heaven inside of a piece of cake. Will this cupcake cure cancer? Nope, but hopefully some physician or scientist is eating one of these babies right now and will lead him/her to the answer. I am hopeful.
The creator of this cupcake, Josie, lost her father and 3 uncles to this disease. Josie linked up with a fabulous site called Frosting for the Cause. How had I not heard of this? I’m not sure. But you must check it out. All kinds of yummy goodness for an amazing cause. And Josie’s recipe for these cupcakes is found on this site.
My favorite thing about this recipe is the cake with pieces of strawberry. Look at that yummy goodness. I did eat one raw cupcake. It was worth the risk I tell you. I dare you.
Then while the cupcakes were baking, I gathered the supplies for the frosting. And guess what, I was able to use my homemade strawberry jam in the recipe. I felt like a domestic goddess for a good 10 minutes.
And voila, here they are…
And for all of you out that that are offended by my disgust of all things pink, I give you the pink cake stand. See… I’m not completely jaded.

For those of you new to my site, I am in remission from breast cancer and when I was undergoing chemotherapy, friends and family would bring dozens of cupcakes and other treats to the chemotherapy lounge. Often the only people eating them were the very friends and family who made them. I lived off Sprite and saltine crackers unfortunately. A friend that was receiving chemotherapy at the same time with me said, “Jenny, if we survive, we need to eat a different cupcake every week for the rest of our lives.” My friend sadly did not survive. So in honor of him and all people fighting this disease, I am baking a different cupcake every week for the next 52 weeks. The recipes I have used are not my own, therefore I link directly to the baker who created the heavenly treat.

OMG! I will need to make these cupcakes and share them with my family. We lost my grandmother to this horrible disease just a year ago. She had a very agressive cancer in her brains. We all miss her very much.
I will honor her fight with this cupcakes and frosting, be use she was crazy avout strawberries.

In my house my husband is the confectioner, I don’t have a sweet tooth but these sounded yum and the children just love baking with Daddy. So I requested these cup cakes and they appeared Valentine’s week.
They were yum yum so fresh!

Jenny hi,
I have been meaning to comment on this post. I see that I also wrote the previous comment on this post also. My husband was inspired to run a coffee morning at work and make buns (what we call cupcakes). So he was up for several evenings in a row and requested support from family members. All in all he raised a significant amount of money for the Irish Cancer Society and the Irish hospice care.
