If you are new to this site, I am making 52 cupcakes this year in honor of my chemotherapy buddy. When we were undergoing chemotherapy, people would bring cupcakes to the chemo room and we would chuckle that we were so nauseous that all we could eat was saltine crackers and Sprite. He said, “If we survive this disease, we should eat a different cupcake every week for the rest of our lives.” My friend didn’t survive. So in honor of him, I am making a different cupcake every week for a year. Every time I make a new cupcake and lick my fingers, I think of him and his zest for life. So in honor of my friend and all cancer patients, I challenge you to eat a cupcake today and remember to always lick your fingers.
I am so excited today to share Cupcake #9, an oreo cupcake from the fabulous Tracy of the Sugarcrafter blog. I know that I am starting to sound like a broken record but “Oh my!”, this is a good, fabulous, and yummy cupcake. Is that enough adjectives? If I keep getting more great recipes, I am going to have to break out my thesaurus.
To start with it’s made from oreos. If you are like me, you could stop right there and grab a glass of milk and call it a day. Oreos and samoas girl scout cookies are hands down my favorite store bought cookies.
I tried another oreo cupcake years ago, but I don’t recall oreo being in the batter. So I think one of my favorite parts of this cupcake is that oreo goodness is in both the batter and frosting. And the frosting tastes exactly like the cream filling in the oreo cookie.
The recipe was easy to follow and the only thing I had to run to the store for were the oreos and shortening. Everything else was in my pantry/refrigerator.
Thanks so much Tracy for a fabulous recipe and I will definitely make it again in the future! My fellow friends at the hospital inhaled them this morning and the only complaint was that I didn’t double the recipe so a couple of doctors and nurses had to share. Today is day before hubby’s birthday and he requested cupcakes since I have now made 2 of yours so this is what he is getting. My dear ole mom (88) is coming over to help. She has never made oreo cupcakes or eaten them either. This will be FUN all around.

they loved them. And my mom was so cute putting on the frosting. The treat was sweet ‘cuz his team won. We have too many – would the local treatment ctr maybe take them given how they got their start ( your 52 cc…)?
