  • 52 Cupcakes- #5 Peanut Butter Chocolate Cupcakes

     

    Can you believe we are already on the fifth cupcake on the journey to discover 52 delicious cupcake recipes in one year? I have yet to find a disappointment, and this cupcake lived up to its hype. This got my oldest daughter’s official vote of favorite. No surprise as she is a Reese’s Peanut Butter Cup fan. So this was right up her alley.

    The recipe was discovered by my friend Hannah on Pinterest. She sent me a message on Facebook recommending this as a potential cupcake. I love all the suggestions coming in. Keep them coming!

    The picture and recipe are from the blog The Farm Girl. She adapted the recipe from Annie’s Eats. Annie is the creator of my first cupcake that was the chocolate chip cookie dough. So I knew any adaptation of Annie’s had to be close to perfection and The Farm Girl did a great job.

     

     

    The first step is to make the peanut butter filling so that it can chill while making the batter. This required me to take the necessary step and request my husband to roll them since I am working so hard at losing weight on my project health journey. He agreed, being the good husband he is, and I do believe a little taste testing occurred.

     

     

    Place a couple of tablespoons of the batter inside the baking cups and then put the chilled ball of peanut butter goodness into the batter and push down. Then put more batter into each cup so that the liners are about 2/3 full. Then put into the oven and start making some breakfast immediately for yourself (scrambled eggs and an apple) so that you aren’t tempted to lick the batter and filling bowls. At this point I quickly put the bowls into the sink and filled with dish soap and water. I know I hear someone saying “Boo!” I deserve it, I know. But remember I am getting healthy.

     

     

    At this point my kitchen smelled heavenly and I opened up the blinds to waken 2 of my kids who slept in my bed last night because we had a sleepover after watching Swiss Family Robinson. I love that movie.

     

     

     

    This was what a late movie does to your kiddos. That’s ok- Swiss Family Robinson is worth it. But now the kitchen smells heavenly and within 5 minutes both kids are at the table saying, “Are we having cupcakes again for breakfast?” I responded “No, that was a one time treat”, although I must admit I was tempted to cave again.

     

     

    Then you top with the yummy peanut butter, cool whip, and cream cheese frosting. Do you hear the angels singing friends? Listen closely. Then sprinkle some chocolate chips and voila you have finished cupcake #5.  Look at that yummy goodness in the middle. I am really starting to like cupcakes with fillings and surprises in the middle. Kind of surprising since I’ve always been more of a cake person than a frosting person.

    This is my favorite flavor combo EVER! Thanks for sharing. I’ve printed the recipe and now I just need to buy a few ingredients, but this is my next baking project! Great photos, too! Keep up the great work!

    These were the best cupcakes I have ever had! Jeff brought over 4 for the kids and I was so glad when one of them past on it…I know crazy…but good for me!! I’ll be dreaming about them tonight!
