Today’s cupcake is a vanilla cupcake with a raspberry filling. And guess what, it is now my husband’s official favorite. I was shocked since this is such a fruity and dainty cupcake. These cupcakes were created by Emma who made them especially for her sister, Elsie, for her wedding. What a special gift. Homemade and personal. The detailed recipe is linked below.
After making the cupcake, I decided to cut out the center of cupcake rather than piping the filling directly into the cake with a pastry bag. You can use a knife and just cut the centers out…or….you can use a gadget. And let’s face it, gadgets are fun.
I used two different gadgets to experiment. In the top picture above I used the Cuisipro cupcake corer. I think the Cuisipro would be better with a filling like in my chocolate chip cookie dough cupcakes. The hole seems to be deeper and wider.
In the second picture I used the Ateco corer (looks very similar to my apple corer- yep, I will try mine next time). I like the Ateco corer for cupcakes like these where I don’t want the filling to overpower the cupcake.
The filling was a great consistency and piped beautifully and easily into the cupcakes. And it wasn’t too sweet which is great considering the sweet and yummy icing to come.
One more experiment- the cupcake liner. The possibilities are endless. Large, small, polka dots, stripes, themed, etc. So I wanted to try a couple different sizes. They both are cute but I decided I liked the smaller raspberry colored liners best. They were dainty and perfect, just like the cupcake.
Yes, I did buy one thing this week that fits my cupcake challenge. A cute cupcake apron for my helpers. Now how is that for a cute factor? My husband is really starting to dislike Williams Sonoma. That’s ok- we all have to live with some disappointment in life.
I’d like to thank my fellow assistants and taste testers, Samantha and Emily. Is it ok to feed your kids cupcakes for breakfast? I just told them it was all organic so that they thought they were healthy. The cupcakes do have a raspberry on top. Don’t argue with me ok? They’re healthy.
