Welcome back to my weekly 52 cupcake series! I’m excited to bring you “The Best Cupcake in the Universe” according to my 10 year old son, Ben.
I received an email from a girlfriend asking me to try a Butterbeer cupcake. I responded, “I’ve never heard of that. That sounds like something out of a Harry Potter novel. And if it has anything to do with Harry Potter, then I’m game!” The same afternoon, another girlfriend sent me an email to check out Cooks Like A Champion Blog, because she said I would love the site and recipes. So I was in heaven when I spent quite some time going through the archives and discovered the Butterbeer cupcake. And she talked about Harry Potter. I immediately put the recipe on my calendar.
Courtney Champion {yes, that is her last name!} is the author of the Cooks Like A Champion Blog. She and her husband, Eric, are self taught cooks that just seem plain likeable. And they are expecting their first child, a little girl, this next week. The recipes on her site look simply amazing and I have bookmarked several of them to try this weekend.

This cupcake was just perfect. How perfect was it? Well it is the last cupcake I am going to eat before transitioning over to my no sugar, no flour eating plan. And I dream of losing my weight so I can go back and eat my weekly cupcake. And this will be my reward for when I get to my goal – right after I get done with a 10 mile run!
This recipe was truly easy to follow. I loved using butterscotch schnapps and cream soda to make the cupcakes. I’m always intrigued when I get to use unique ingredients and even more delighted when the recipe turns out so well.
This cupcake has a butterscotch ganache filling that is thin and I injected it right into the cupcakes when they were warm. The buttercream icing is sweet and is so pretty when drizzled with the leftover butterscotch ganache. Overall: 6 thumbs up! And Ben declared it his favorite in this series. I was shocked as he is not my kid to typically rate cupcakes or make a big deal about them. So I was so excited to hear the excitement in his voice.

Story of the 52 cupcakes:
I am making 52 cupcakes this year in honor of my chemotherapy buddy. When we were undergoing chemotherapy, people would bring cupcakes and other treats to the chemotherapy “lounge”. We would smile, laugh, and talk about how we were so nauseous and that all we could eat was saltine crackers and Sprite. We were glad that our family and friends were comforted by them though.My friend said, “If we survive this disease, we should eat a different cupcake every week for the rest of our lives.” My friend did not survive. So in honor of him, I am making a different cupcake every week for a year. Every time I make a new cupcake and lick my fingers, I think of him and his zest for life. So in honor of my friend and all cancer patients, I challenge you to eat a cupcake today and remember to always lick your fingers.

Those look incredible!!!! Would you mind if I took the picture off your site to print and post in my kitchen for incentive to stay on my healthy eating plan. When I get to my goal I will make these and eat one. My daughters will be all over the Butterbeer part, hopefully they can wait until my weight comes off to make them.

These look wonderful! I have added many of your cupcake finds to my list (&pinterest) for when I too am ready to enjoy a weekly cupcake. I have been carb/sugar (with the exception of carrots, corn & peas) free for just about a year (on 4/1) and feel great. I am not at my goal yet but when I am ready I have already told myself I will eat one cupcake a week…I can’t deprive myself of these heavenly morsels forever!

I agree Tracy. It’s all about balance and I’m looking forward to being at my goal weight as well. A once a week treat is perfect and this will be one of my first cupcakes to eat when I get there.

does the butterscotch schnapps leave an alcohol or whiskey, rum, or brandy flavor to the filling or drizzle? Just curious. Thanks. Kt

No – not at all according to me, Jeff, and Rebecca.
I did read over on Cooks Like a Champion that you could use butterscotch flavoring to replace, but to use less of the flavoring as it is more concentrated – like just a teaspoon.
