  • 52 Cupcakes – #10 Cinnamon Roll Cupcakes

     

    Hi friends. I’m sorry for the internet silence. It’s been an adventure the past couple of weeks with sick children, but I’m back at it. And well, it’s worth the wait!

     

    Today’s cupcake is brought to you by the letter A. Acutally it’s not. Sorry, but lots of Sesame Street goes along with sick kids. Today’s cupcake is so yummy and created by the fabulous Kristan of Confessions of a Cookbook Queen. And can you believe that we are in double digits? That’s right-10 cupcakes so far in my quest to make 52 cupcakes in honor of my chemotherapy buddy who told me that “if we survive cancer, we should eat a different cupcake every week for the rest of our lives” since we were too sick to eat the ones that were always available in the chemotherapy lounge.  So in honor of him and all others who fight this disease, I am making a different cupcake every week for 52 weeks. I seek out great bakers and blogs and whip up some amazing cupcakes. Since these are not my recipes, I always link to the baker’s recipes directly.

     

    Last week, I tweeted Kristan and asked for her favorite cupcakes and quite frankly, she had me at “cinnamon roll.” My mom made me scrambled eggs and Pillsbury Cinnamon Rolls at least 3 times a week for my entire childhood. And there is a proper way to eat a cinnamon roll BTW. First you eat the sides, then the bottom, so that you are left with the icing on top last. As an adult, I still eat them the exact same way. I know, I have issues.

     

    This is the first cupcake I have made that uses a boxed cake mix. And I’m here to say, I have no issues with that. And after you taste these, you won’t either. After mixing the cake batter, I layered it with some brown sugar and cinnamon in the middle and on the top as instructed. My sister asked, if you could just mix it in with the batter. I wouldn’t see why not, but they turned out great the way I made them. So why mess with a good thing, right?

    My favorite part was the cake and the glaze. I am not a huge frosting person to begin with (as I said, I have issues). The flavoring of the frosting was perfect, but I piled it high. That didn’t stop the 2 dozen girls that devoured the cupcakes frosting and all after their volleyball team victory.

    I have recently found your blog through Becky Higgins and LOVE the cupcake journey you are on! The cinnamon roll cupcakes sounds amazing, but I am really itching to try the Oreo cupcakes. The sound amazing! Keep up the great blog.

    Wow, these really look yummy! You DID eat lots of Pillsbury cinnamon rolls growing up. I did try to give you other healthy food (like Pita) but you held your ground–so cinnamon rolls & scrambled eggs it was. I convinced myself that you were getting protein from the eggs but I am not mentioning the stick of butter I used making them. I can understand why you chose these
    cupcakes however I do want to remind you that these will not help your Project Health but it will give you something else to blog about. I think i can vouch for that!
    Enjoying the blog–I think I might just be gaining weight from reading it:)

    I too grew up on scrambled eggs and Pillsbury rolls. We actually had the ones with the orange frosting and I still love them today. I am so happy that Katie gave me your website. I look forward to reading each one of your posts.
    Glad to know you are doing well. I loved the dancing video. It is my favorite so far.

      Thanks Pam and I’m glad Katie sent you over too! Can you believe I have NEVER tried the orange frosting? I’ve passed them in the supermarket a million times. But that’s it- this weekend I’m trying them and I’ll have to report back!
      And my dancing video is on the top 5 things I’ve done in my entire life. I need (and will) dance more in the future. Thx Pam!-J
